This was just a throw things in a pan and see what happens type of soup. Because it went so well I wish to share my discovery with all of you lovely folks. It’s cheap, easy and the eggs add in some much-needed protein. Not to mention that it’s incredibly healthy and nutritious.
Ingredients:
1tbsp olive oil
1 clove of garlic (crushed)
1 medium onion (chopped finely)
2 small carrots (cut into small pieces)
1 red pepper (cut into small pieces)
1 large potato (peeled and diced into 2cm squares)
40g chorizo (chopped small)
1/2 red chilli (chopped small)
400g tin of chopped garlic tomatoes
400g tin of chick peas (drained and rinsed)
2 chicken stock cubes dissolved in 750ml boiling water
1 tbsp tomato puree
2 tsp sugar
1 level tbsp smoked paprika
salt and pepper to taste
2 tsp mixed herbs
1tbsp balsamic vinegar
One or two eggs per person.
Method:
1) Place a large pan over a gentle heat and add the olive oil and let it heat up until the oil is runny but not bubbling.
2) When the oil is warm add in the potatoes, onion, chorizo, carrots, red pepper and chilli and heat on a medium heat for 5 mins, or until the onions are translucent. Stir constantly.
3) Add in everything else but the eggs, salt, pepper and balsamic vinegar and boil for 15 mins until the carrots and potatoes are easy to stab with a fork. Make sure you stir it regularly so that it cooks evenly and doesn’t stick.
4) Add in balsamic vinegar and stir then season with salt and pepper. Remember: do a little at a time and taste because you can always add more. It’s much harder to remove if you put too much in.
5) Poach your eggs using the lazy method but under cook them slightly because they will continue to cook in the soup.
If you want a more hit and miss (but can’t be bothered) method you can just crack all of the eggs you want into a large cup and tip them in the soup and simmer for 2 minutes. This works well but doesn’t look as pretty.
6) Place the eggs into the soup and eat with buttered bread for a filling and nutritious lunch 🙂
As you can see my toddler greatly approved and even requested seconds.
